Squash Souffle - cooking recipe

Ingredients
    1 lb. yellow squash
    8 or 10 soda crackers
    1/4 c. butter
    2 eggs
    1 large onion
    1/2 c. milk
    1 c. grated sharp cheese
    salt and pepper
Preparation
    Cook squash and onion together until tender; drain off water and mash squash and onion until fine.
    Add salt, pepper, cheese, butter, egg yolks and finely crumbled crackers.
    Beat egg whites until stiff; fold into mixture.
    Bake in buttered casserole dish at 350\u00b0 until brown.
    Serve hot.
