Cheese And Broccoli Soup - cooking recipe

Ingredients
    3 Tbsp. butter
    1 small clove, chopped fine
    3 Tbsp. flour
    2 (13 3/4 oz.) cans chicken broth
    1 medium head broccoli
    1/4 tsp. ground pepper
    1 c. heavy cream
    1 1/2 c. shredded Swiss cheese
    1 small onion, chopped fine
    1/2 c. water
    1/4 tsp. leaf thyme, crumbled
    1 egg yolk
Preparation
    Melt butter in large saucepan.
    Add onion and garlic; saute until tender.
    Sprinkle flour over and cook, stirring constantly to make thickening.
    Gradually add broth and water, stirring constantly.
    Bring to boil, stirring frequently.
    Add broccoli, thyme, and pepper.
    Cover and simmer until broccoli is tender. Stir together cream and egg yolk.
    Stir a little soup into cream mixture until warm.
    Add to saucepan, stirring constantly.
    Add cheese; stir until smooth and blended.
    Do not let boil.
    Serves 6.
