Low-Fat Chicken And Rice Soup(Serves 6 To 8) - cooking recipe

Ingredients
    3 c. defatted sodium-reduced chicken broth
    1/3 c. uncooked wild rice
    1/2 c. sliced green onions
    2 shredded carrots
    1 c. skim milk
    2 Tbsp. all-purpose flour
    1/8 tsp. pepper
    1 Tbsp. dry sherry
    fresh parsley or chives
Preparation
    Combine broth and uncooked rice. Bring to a boil. Reduce heat, cover and simmer for 40 to 45 minutes. Stir in onions and carrots and cook for 5 more minutes. Combine
    milk, flour and pepper. Stir into rice mixture.
    Cook and stir until slightly thickened and bubbly. Cook and stir 1 minute more. Stir in sherry. Garnish with fresh parsley or chives before serving.
