Refrigerator Pineapple Preserves - cooking recipe
Ingredients

2 cans (20 oz. each) crushed pineapple in unsweetened juice
1 1/2 c. packed light brown sugar
1 Tbsp. lemon juice
1 cinnamon stick, broken in half
1/4 tsp. nutmeg
Preparation

In heavy saucepan, simmer all the ingredients 40 to 50 minutes over medium heat, stirring occasionally, until liquid has thickened.
Pour into hot sterilized jar; cool.
Cover tightly. Refrigerate up to 1 month.
Makes 2 pints (4 cups).
Serve with ham or smoked meat.
Use as a filling between cake layers or on the bottom of an upside-down pineapple cake.
