Sicilian Baked Chicken - cooking recipe
Ingredients

1 cut up chicken
5 medium-size potatoes
1 large onion
1/4 tsp. each: basil, oregano, parsley, rosemary
2 Tbsp. olive oil
salt and pepper to taste
Preparation

Place chicken in a large baking pan.
Peel and cut potatoes in quarters lengthwise.
Cut quarters in half again.
Place potatoes in between chicken.
Sprinkle herbs over all.
Slice onion and place on top of potatoes and chicken.
Drizzle the oil on top. Bake for 1 hour at 375\u00b0, turning chicken and potatoes after first 1/2 hour.
