Chicken-Zucchini Stir-Fry - cooking recipe

Ingredients
    1 tsp. vegetable oil
    2 c. boneless chicken, cut in pieces
    3 medium zucchini, cut in thin slices
    2 medium onions, cut in small pieces
    1 stalk celery, cut in small pieces
    1/2 tsp. black pepper
    1/2 tsp. red pepper
    1/2 c. Cheddar cheese
Preparation
    Put the oil in a large skillet.
    Turn the heat to medium.
    Add chicken.
    Stir.
    Cover the skillet.
    Cook about 5 minutes.
    Add the zucchini, green peppers, onion and celery to the skillet.
    Stir gently until the vegetables are coated with oil.
    Cook until the chicken and vegetables are hot.
    Put the lid on the skillet.
    Turn the heat to low.
    Cook about 5 minutes.
    Cook until the zucchini is tender and firm.
    If the mixture gets dry, add a little water.
    If there is liquid in the skillet, cook with the lid off.
    Add black and red pepper.
    Stir gently.
    Cut cheese and place on top, if desired.
