Crab Cakes - cooking recipe

Ingredients
    8 oz. crabmeat, minced (frozen or canned may be used)
    12 unsalted saltines, made into fine crumbs
    1 egg
    2 Tbsp. each minced onion, minced red bell pepper, finely chopped fresh parsley
    1 Tbsp. light mayonnaise
    1 Tbsp. lemon juice
    1/4 tsp. powdered mustard
    dash of red pepper
    dash of white pepper
    1 1/4 tsp. vegetable oil
Preparation
    Combine all ingredients except oil.
    Divide into 4 portions forming each into a patty.
    Cover and refrigerate at least 30 minutes.
    Heat oil over high heat, reduce heat to medium and add patties.
    Cook, turning once, until browned, about 3 minutes on each side.
    Serve on warmed platter with a seafood sauce.
    Yield: 2 servings of 2 patties each.
