Great Gazpacho - cooking recipe
Ingredients

4 c. tomato juice
1 medium onion
2 c. diced tomatoes
1 c. green pepper
1 medium cucumber
2 scallions
juice of 1 lemon
1/2 c. yellow squash
1/2 c. zucchini
dash of cumin
1/4 c. parsley
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. red pepper
2 Tbsp. olive oil
1 clove garlic
1 tsp. honey
Preparation

Dice onion, tomatoes, green pepper and cucumber.
Combine all ingredients and chill for 2 hours. Top with chopped scallions. You may puree the soup, if desired.
Serves 6 people.
