Cheese Soup - cooking recipe

Ingredients
    1/4 c. butter
    1/2 c. onion, diced fine
    1/2 c. carrot, diced fine
    1/2 c. celery, diced fine
    1/4 c. flour
    1 1/2 Tbsp. cornstarch
    1 qt. chicken stock
    1 qt. milk
    1/8 tsp. baking soda
    1 to 2 c. grated cheese (our family likes Velveeta best)
Preparation
    Saute vegetables in the butter until soft.
    Stir in flour and cornstarch.
    Cook until bubbly.
    Slowly add stock and milk, stirring to make a smooth sauce.
    Add soda and cheese.
    Heat gently until the cheese is melted.
    Salt and pepper to taste.
