Millionaire Salad - cooking recipe

Ingredients
    1 (14 oz.) can artichoke hearts, quartered
    1 (14 oz.) can hearts of palm, sliced into 1/4-inch pieces
    1 (14 oz.) jar pitted ripe olives, sliced
    2 oz. roasted red peppers (packed in oil), diced
    8 oz. fresh mushrooms, sliced
    1 clove garlic, minced
    1/4 tsp. pepper
    1/2 tsp. thyme
    1/4 c. red wine vinegar
    1 tsp. salt
    1/4 c. parsley, chopped
    2/3 c. vegetable oil
Preparation
    Drain artichoke hearts, hearts of palm, olives, pimentos and red peppers.
    Place with sliced mushrooms in a large glass container with lid.
    Combine other ingredients.
    Marinate vegetables in oil mixture overnight.
    Remove veggies from marinade with slotted spoon.
    Serve chilled in lettuce-lined bowl.
