Mexican Chicken - cooking recipe
Ingredients

2 c. cooked boned chicken breasts
1 onion, diced fine (optional)
1 large (21 oz.) can cream of chicken soup or 2 small cans
1 can Ro-Tel
1 can chicken broth
1 medium bag Doritos
1 1/2 c. grated cheese
Preparation

In a 9 x 13 pan, layer chicken on bottom, onions and Doritos (crushed). Mix cream of chicken and Ro-Tel together. Pour soup mixture over Doritos. Slowly pour chicken broth over soup mixture. Cover with cheese. Cover with foil. Bake 45 minutes in a 325\u00b0 oven. Carefully remove foil. Bake additional 15 to 25 minutes.
