Polynesian Turkey - cooking recipe
Ingredients

3 c. cooked, cubed turkey
2 stalks celery, sliced thin
1 tsp. curry
1/4 tsp. salt
3/4 c. mayo
2 Tbsp. chopped chutney (optional)
2 c. (15 1/2 oz. can) pineapple chunks, drained
1 banana, sliced
1/2 c. salted peanuts or cashews
1/2 c. coconut
11 oz. can mandarin oranges, drained
Preparation

In a large bowl, combine first 7 ingredients.
Toss lightly. Cover and chill at least 2 hours.
Before serving, slice banana. Add to turkey mixture with nuts.
Serve in lettuce cups.
Garnish with coconut and oranges.
