Lebanese Potato Salad - cooking recipe

Ingredients
    6 potatoes
    1 clove garlic, crushed
    1 bunch parsley, chopped
    1/2 bunch fresh mint, chopped
    1/3-1/2 c. salad oil
    Juice of 1 lemon
    Salt, pepper to taste
Preparation
    Boil potatoes with skins on.
    Do not overcook.
    Cool until you can handle them.
    Peel and salt while still warm.
    Mix other ingredients thoroughly.
    Add to diced potatoes.
    Mix and chill until served.
