Chicken And Sausage Jambalaya - cooking recipe
Ingredients

3/4 lb. boneless chicken
3/4 lb. hot sausage
2 Tbsp. oil
1/2 large onion, chopped
1/2 bell pepper, chopped
2 stalks celery, minced
1 clove garlic, minced
1 lb. can tomatoes
1 c. rice
2 c. liquid (this includes tomato liquid as well as chicken broth)
1 c. smoked ham, chopped
2 green onions, chopped
1/8 c. parsley, chopped
1/4 tsp. cayenne pepper
salt and pepper to taste
Preparation

Brown chicken in oil.
Remove chicken and saute onion, bell pepper, celery and garlic in grease.
Add tomatoes and ham.
Add liquid.
Cover and simmer for about 20 to 30 minutes.
Bring to a boil.
Add rice, chicken, sausage, green onions, parsley and seasonings.
Cook, covered, over low heat for at least 20 minutes or until rice is done.
