Carrot Slaw - cooking recipe

Ingredients
    1 lb. carrots
    small jar of chopped pimentos or
    1/2 red bell pepper diced
    fresh parsley
    salad vinegar
    honey
    dash of salt
Preparation
    Grate, grind or chop the peeled carrots,add the chopped pimentos or chopped red pepper.Add the chopped parsley. In a mug put about 1/3 to 1/2 cup of salad vinegar. Add honey one Tbsp. at a time until the mixture is sweet to your taste,be sure to stir this mixture all the time,then add a dash of salt and pour over the veggies. Let it chill in the refrigerator overnight or for several hours to blend flavors.
