Ingredients

2 c. sifted flour
2 eggs
2 c. milk
2 tsp. baking powder
3 tsp. salt
3 large Spanish onions
oil for frying
Preparation

Combine first 5 ingredients in a large bowl.
Beat until smooth.
Cover and let stand for at least 1/2 hour.
Heat oil to 375\u00b0 in a deep fryer.
Slice onions into 1/4 to 2/3-inch slices, separating into rings.
Dip each ring into batter and fry, a few at a time, until golden.
Drain on paper towels and cool; then pack into plastic bags.
Freeze immediately.
