Ingredients

1/4 c. Dijon mustard
3 Tbsp. honey
2 tsp. lemon juice
2/3 c. plain bread crumbs
1 lb. boneless skinned chicken
1 Tbsp. vegetable oil
Preparation

Preheat oven to 375\u00b0.
Lightly grease 15 x 10 x 1 1/2-inch pan or spray with vegetable cooking oil spray; set aside.
Combine mustard, honey and lemon juice in shallow dish.
Place crumbs in another dish.
Dip chicken pieces in mustard mixture, turning to coat, then in bread crumbs.
Place on pan.
Drizzle evenly with oil.
Bake in oven 30 to 35 minutes or until golden brown and cooked through.
