Blizzard Of 1993 Soup - cooking recipe

Ingredients
    1 lb. navy beans
    3 qt. water
    3 medium yellow onions
    1 large clove garlic
    butter
    salt
    smoked ham hock
    smoked hot sausage, sliced and browned
    1 Tbsp. parsley
    2 bay leaves
    1/2 lemon
    Tabasco sauce (several drops)
    2 c. water (add during preparation)
Preparation
    Soak beans for several hours.
    Wash and put in a large pot and cover with 3-quarts water.
    Add onions and garlic, both slightly browned in butter.
    Salt to taste.
    Add ham hock, parsley, bay leaves, juice of 1/2 lemon and several drops of Tabasco sauce. Cover and cook slowly for 3 to 4 hours.
    Add smoked sausage and pepper to taste and cook about 45 minutes longer.
