Ingredients

1/2 c. sugar
1/3 c. flour
dash of salt (optional)
egg substitute equal to 3 eggs
2 c. skim milk or 2%
1 tsp. vanilla
1/4 to 1/2 tsp. nutmeg
5 to 6 medium very ripe bananas
3 doz. vanilla wafers
12 to 15 marshmallows
Preparation

Combine sugar, flour and salt.
Blend together with egg substitute in top of a double boiler.
Cook, uncovered, over boiling water, stirring constantly until thickened.
Reduce heat and cook for 4 to 5 minutes, continuing to stir.
Remove from heat; add vanilla and nutmeg.
Spread a small amount of custard on bottom of a 1 1/2-quart bowl or casserole.
Add a layer of wafers, sliced bananas, custard, wafers, sliced bananas and ending with custard to make 3 layers.
Place marshmallows on top and bake at 450\u00b0 for 3 to 4 minutes until marshmallows are slightly brown. Serve warm or room temperature.
Makes 8 servings.
