Avocado Orange Salad - cooking recipe
Ingredients

2 medium ripe avocados
1 medium red onion, thinly sliced
1/2 c. vegetable oil
3 Tbsp. lemon juice
3 Tbsp. scotch
1/2 tsp. sugar
1/2 tsp. salt
1/8 tsp. pepper
2 navel oranges, peeled and sectioned
lettuce leaves
Preparation

Peel and stone avocados; cut into cubes.
Combine avocados and onion in a medium size bowl.
Toss gently to mix well.
In a small bowl combine oil, lemon juice, scotch, sugar, salt and pepper; mix well.
Pour over avocado mixture.
Cover and refrigerate at least 2 hours, stirring occasionally.
To serve, place orange sections on lettuce, pile on avocado mixture in center.
Makes 6 servings.
