Vegetarian Casserole - cooking recipe

Ingredients
    3 large potatoes
    1/2 c. yogurt
    1/2 c. fresh chives, minced
    1/2 c. fresh parsley, minced
    1 1/2 Tbsp. butter
    1 large onion
    1 clove garlic, minced
    4 large carrots, chopped
    2 stalks sliced celery
    1 lb. mushrooms
    2 large zucchinis
    1 green bell pepper
    1/4 tsp. thyme
    1/2 tsp. basil
    1/2 tsp. oregano
    1 c. frozen peas
    3/4 c. tomatoes
    3/4 c. grated Cheddar cheese
    1 Tbsp. cider vinegar
    1/4 tsp. paprika
    1/4 tsp. pepper
    1 c. spinach (optional)
    1 c. broccoli (optional)
Preparation
    Cook potatoes in boiling water until soft.
    Drain and mash potatoes and mix with yogurt (or 1/4 cup milk), chives and parsley.
    Set aside.
