Easy Vegetable-Cheese Casserole - cooking recipe

Ingredients
    2 small zucchini
    1 large carrot
    6 to 8 mushrooms
    1 large onion
    1 medium green pepper
    2 cloves garlic
    1 medium can chopped tomatoes or fresh tomatoes
    2 to 3 oz. shredded sharp Cheddar cheese
    2 to 3 oz. Monterey Jack cheese
    salt and pepper to taste
Preparation
    Slice all vegetables into small pieces.
    In an oblong casserole, arrange slices of vegetables in layers or randomly. Last, season with salt and pepper and sprinkle shredded sharp cheese and Monterey Jack cheese on top of vegetables and bake in 350\u00b0 oven until vegetables are tender and cheese is melted, about 1/2 to 3/4 hour.
    Also, can dot with butter or margarine.
    Yields 4 to 6 servings.
