Mashed Potato Casserole - cooking recipe

Ingredients
    8 to 10 potatoes
    salt and pepper to taste
    1 (8 oz.) pkg. cream cheese, softened
    2 eggs, beaten lightly
    2 Tbsp. flour
    2 Tbsp. parsley
    1 small onion, grated
    1 (3 1/2 oz.) can French fried onions
Preparation
    Boil the potatoes. Drain and mash with mixer. Season to taste. Add cream cheese and beat thoroughly.
    Blend in eggs, parsley and onion; beat until fluffy.
    Place in buttered casserole. Bake, uncovered, at 325\u00b0 for 25 minutes.
    Place French fried onions on top and bake 5 minutes more.
    May be prepared in advance and refrigerated.
    Serves 8 to 10.
