Zucchini And Red Peppers - cooking recipe

Ingredients
    4 or 5 medium zucchini
    2 c. sliced onions
    2 cloves garlic, pureed
    1/2 c. dry white wine or vermouth
    1/2 c. chicken broth
    1 or 2 sliced red peppers (or strips of canned red pimento)
Preparation
    Scrub and trim zucchini.
    Grate them by hand or in a processor; toss in a bowl with 1/2 teaspoon of salt and let sit 20 minutes.
    Squeeze out moisture.
