Fountain Hills, Arizona Potatoes - cooking recipe

Ingredients
    4 c. potatoes, cubed
    1 medium onion, chopped
    2 oz. chopped pimento
    4 Tbsp. margarine
    4 Tbsp. flour
    1/2 lb. grated cheese
    1 tsp. salt
    2 c. milk
    buttered bread crumbs (for topping)
Preparation
    Cover potatoes and onion with water. Cook 5 minutes. Add pimento and cook 1 minute more. Drain and set aside. Melt margarine. Add flour, cheese, salt and milk. Stir until smooth. Add potatoes to this cheese sauce, then pour into a casserole dish. Top with buttered bread crumbs. Bake at 350\u00b0 until bubbly.
