Ingredients

1 lb. ground beef
2 to 3 Tbsp. oil
1 large onion, chopped
1 green pepper, chopped
1 clove garlic, minced or pressed
1 jar (15 oz.) spaghetti sauce
3/4 tsp. Italian seasoning or 1/4 tsp. each basil, oregano and thyme
1/4 tsp. each basil, oregano and thyme
2 c. shredded Cheddar, Monterey Jack or Mozzarella cheese
2 eggs
1 c. milk
1 c. flour
1/2 tsp. salt
3 tsp. grated Parmesan cheese
Preparation

In skillet cook meat on medium-high heat until browned, adding oil as needed.
Drain off all but 2 teaspoons fat.
Add vegetables, saute until limp.
Add sauce and seasonings.
Simmer uncovered for 5 minutes.
Spread meat mix in bottom of 9 x 13-inch baking dish/pan.
Sprinkle cheese evenly over meat.
In blender add eggs, milk, flour, 1 tablespoon oil and salt.
Blend, pour over cheese. Sprinkle with Parmesan.
Bake in preheated oven at 400\u00b0 until browned and puffy, about 30 minutes.
