Chicken Fricassee - cooking recipe

Ingredients
    1 Tbsp. vegetable oil
    2 slices Prosciutto, cut in small pieces
    3 lb. chicken pieces
    salt and pepper to taste
    1 clove garlic, chopped
    1 c. strong red wine
    4 or 5 tomatoes, peeled and sliced
Preparation
    In large frying pan, put oil, chicken and prosciutto. Sprinkle with salt and pepper.
    Brown chicken thoroughly over low heat, turning frequently.
    When brown, add chopped garlic and wine.
    Cook until wine has evaporated, then add tomatoes.
    Add a little stock or water if necessary.
    Increase heat and cook about 20 minutes.
    The chicken should be well done by this time.
    The gravy should be thick, dark and not too abundant.
    Serves 4.
