Zucchini Squash Relish - cooking recipe

Ingredients
    10 c. chopped zucchini, do not peel
    4 c. chopped onions
    3 Tbsp. salt
    4 c. sugar
    2 1/2 c. vinegar
    1/2 Tbsp. dry red pepper
    1/2 Tbsp. dry mustard
    2 1/2 Tbsp. turmeric
    3 Tbsp. cornstarch
    1/2 Tbsp. nutmeg
    3 c. chopped Bell peppers
Preparation
    Mix zucchini, onions and salt together.
    Cover with water and let stand overnight.
    Drain and rinse under water.
    Add the remaining ingredients and bring to a boil.
    Boil 3 minutes and seal in hot, sterilized jars.
    Makes 6 pints.
