Ripe Tomato Relish - cooking recipe
Ingredients

2 qt. chopped cabbage
4 or 5 bell peppers, diced
1/2 c. salt
3 qt. ripe tomatoes, peeled and cut in chunks
1 pt. chopped onion
1 qt. vinegar
3 1/2 c. sugar
1 tsp. celery seed
1 tsp. mustard seed
1 tsp. allspice
1 tsp. cloves
1 tsp. black pepper
1/2 tsp. diced hot pepper
Preparation

Combine cabbage, bell peppers and salt; let set for 1 hour, then drain.
Combine with remaining ingredients; mix well and cook for 40 minutes, stirring frequently.
Make a paste of 1/2 cup flour and 1 cup cool water to which is added some of the hot relish mixture to prevent lumping; add this to mixture, stirring rapidly until thick.
Place in hot jars and seal.
Process filled jars in a hot water bath for 10 minutes.
Yield: 6 to 8 pints.
