Salmon Croquettes - cooking recipe

Ingredients
    1 (16 oz.) can pink salmon
    1 c. instant mashed potatoes
    1/4 c. chopped onion
    2 tsp. chopped parsley
    2 eggs
    1 c. bread or cracker crumbs
    1 c. water
Preparation
    Heat water to boiling.
    Remove from heat and add instant potatoes; mix.
    Add to the rest of the ingredients and mix well. Shape into patties.
    Roll in a mixture of 1 cup flour and 1 cup cracker meal.
    Fry in cooking oil in skillet until golden brown. Drain on paper towel.
