Stuffed Baked Potatoes - cooking recipe

Ingredients
    3 medium size baking potatoes
    2 Tbsp. butter or margarine
    1 tsp. parsley flakes
    1/2 c. shredded sharp Cheddar cheese
    1/2 c. sour cream
    2 green onions, chopped
    salt and pepper to taste
    paprika
Preparation
    Scrub potatoes under cold water.
    Dry with a paper towel. Pierce each potato twice with a fork.
    Place 1-inch apart on a paper towel in the microwave oven.
    Microwave at High (100%) until center is slightly firm, 10 to 12 minutes.
    Let stand 5 minutes. Cut potatoes in half lengthwise.
    Scoop out inside, leaving small amount next to outer skin.
    Add margarine, parsley, cheese, sour cream, salt and pepper.
    Mash well with a potato masher or electric mixer.
    Spoon mixture into potato shells.
    Place stuffed shells in a 2-quart oblong baking dish (microwave-safe).
    Top with chopped green onions.
    Sprinkle with paprika; just a few sprinkles on each.
    Cover with wax paper.
    Microwave at Medium heat (70%) until heated through, 4 to 5 minutes.
    Makes 6 servings.
