Pumpkin Cake Roll - cooking recipe
Ingredients

3 eggs
1 c. sugar
2/3 c. pumpkin
1 tsp. lemon juice or 1/2 tsp. vinegar
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. salt
1/2 c. finely chopped nuts (optional)
Preparation

Beat eggs at high speed for 5 minutes.
Gradually add sugar. Stir in flour, baking powder, cinnamon and salt.
Stir in pumpkin and lemon juice.
Spoon into greased and floured 15 x 10 x 1-inch pan.
Top with nuts.
Bake at 375\u00b0 for 15 minutes.
Turn out on towel; sprinkle with powdered sugar.
Starting at narrow end, roll towel and cake together.
Cool.
Unroll for filling.
