Carrot Bread - cooking recipe

Ingredients
    2 pkg. yeast, dissolved in 3/4 c. water and 1 tsp. sugar
    1 c. tomato juice
    2 eggs, beaten
    1 Tbsp. salt
    2 Tbsp. onion, grated
    3 Tbsp. oil
    2 c. flour
    1 1/2 c. grated carrots (raw)
    1 c. fresh parsley
    1 Tbsp. basil
    4 to 5 c. flour
Preparation
    Mix together like a sponge first 8 ingredients; let rise 20 minutes.
    Add to sponge the carrots (raw), parsley, basil and flour.
    Knead; let rise until double in bulk.
    Form into 2 loaves. Let rise again.
    Bake at 375\u00b0 for 35 minutes.
