Chocolate Banana Cake - cooking recipe
Ingredients

3 extra ripe medium bananas, peeled
1/3 c. sugar
3 eggs
3 (1 oz. each) sq. unsweetened chocolate
1/2 c. shortening
1 Tbsp. rum extract
1 3/4 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
Rum Fudge Frosting
Preparation

Slice bananas into blender.
Puree until smooth (1 1/2 cups). In saucepan, combine 1/2 cup pureed bananas, 1/3 cup sugar, 1 egg and chocolate.
Heat until chocolate melts.
Cool.
Cream remaining 1 cup sugar with shortening until light and fluffy.
Add rum extract and remaining 2 eggs, one at a time, beating well after each.
Combine dry ingredients.
Beat with creamed mixture alternately with remaining bananas.
Blend in chocolate mixture. Bake in 2 greased and floured 9-inch round cake pans in a 350\u00b0 oven for 25 to 30 minutes until done.
Cool 10 minutes in pan. Invert on wire rack to cool.
Cut slice in top of cake.
Put cut side up and frost with Rum Fudge.
Frost sides and top.
Garnish cake with banana slices.
Makes 8 to 10 servings.
