Fried Shad-Roe - cooking recipe
Ingredients

4 large shad
salt and pepper
flour
beaten eggs
bread crumbs or corn meal
fat
Preparation
-
Take the hard roe of shad; season with salt and pepper.
Roll in flour.
Immerse in beaten eggs.
Roll again in bread crumbs or corn meal.
Fry in enough fat to cover.
Fry slowly.
Shad roe has a tendency to pop.
Drain on paper toweling.
Serve with tomato sauce and lemon slices.
