Oma'S Crepes - cooking recipe

Ingredients
    3 eggs (room temperature)
    1 c. milk
    1 c. flour
    Crisco shortening (for frying; I use butter flavored)
    powdered sugar, jam or fresh fruit (for filling)
Preparation
    Whisk together eggs, milk and flour.
    Melt about a heaping teaspoonful of shortening in large frying pan (cast-iron or Teflon works best).
    When hot, put large ladle of batter in pan, moving pan side to side to thin out batter to size of bottom of pan. When lightly browned, quickly turn with spatula and brown a minute on other side.
    Put on plate.
    Fill center with fruit, jam or sprinkle with powdered sugar.
    Roll up and serve.
    Serves 4, about 8 crepes.
