Carrot Cake - cooking recipe
Ingredients

1 1/2 c. oil
2 c. sugar
4 large eggs
2 c. flour
2 tsp. cinnamon
2 tsp. soda
2 tsp. baking powder
1 tsp. salt
1 c. pecans, chopped
3 c. grated carrots
1 c. crushed pineapple
1 stick oleo, softened
8 oz. cream cheese, softened
1 tsp. vanilla
1 lb. box powdered sugar
Preparation

Mix oil and sugar; add eggs, one at a time.
Sift together flour, soda, baking powder, cinnamon and salt.
Add dry mixture in small amounts to egg mixture until all ingredients are well blended. Add vanilla.
Blend in carrots, pineapple and pecans. Bake in 3 greased and floured 9-inch pans at 350\u00b0 for 30 to 40 minutes.
Check at 25 minutes.
Ice with Cream Cheese Frosting.
