Karen'S Lasagna - cooking recipe

Ingredients
    1 Tbsp. vegetable oil
    1 lb. ground beef
    1/2 c. chopped onions
    1 tsp. minced garlic
    1 (28 oz.) whole tomatoes
    1 (6 oz.) tomato paste
    3 Tbsp. chopped parsley
    1 tsp. salt
    1/2 tsp. dried oregano
    1/2 tsp. dried basil leaves
    1/4 tsp. pepper
    2 (16 oz.) small curd cottage cheese
    1/2 c. grated Parmesan cheese
    2 eggs
    1 (16 oz.) cooked lasagna noodles
    1 lb. Mozzarella cheese, coarsely grated
Preparation
    Heat oven to 350\u00b0.
    In skillet, heat oil over moderate heat. Add beef, onion and garlic and cook 7 to 8 minutes, stirring occasionally until meat is no longer pink.
    Drain off any fat.
    Add tomatoes, tomato liquid, tomato paste, 1 tablespoon of parsley, oregano, salt, basil and pepper to skillet.
    Reduce heat to low and simmer about 1 hour, stirring occasionally, until thick. Meanwhile, in a medium size bowl, mix cottage cheese, Parmesan cheese, eggs and remaining 2 tablespoons parsley with a fork until well mixed.
