Eggplant Chutney - cooking recipe

Ingredients
    2 lb. eggplant
    3 medium onions
    1 lb. tart apples
    2 tsp. pickling spice
    1 1/2 c. vinegar
    2 tsp. ground ginger
    1 tsp. salt
    3 1/3 c. dark brown sugar
Preparation
    Peel and chop eggplant.
    Core and chop apples.
    Finely chop onions.
    Put the pickling spice in cheesecloth.
    Put all ingredients in pan, except sugar, and simmer for 30 to 40 minutes. Add sugar and simmer until thick and lustrous.
