Almond Chicken - cooking recipe
Ingredients

1 c. mayonnaise
3 Tbsp. lemon juice
1/4 c. chopped onion
2 c. diced, cooked chicken
2 c. chopped celery
2/3 c. slivered almonds
1 c. crushed potato chips
1/2 c. shredded sharp cheese
2 whole chicken breasts (about 10 oz. each)
4 oz. Swiss cheese, thinly sliced
1/4 lb. ham, thinly sliced
1/4 c. flour
1 egg, beaten
1/2 c. fine dry bread crumbs
2 Tbsp. butter
salt and pepper to taste
Preparation

Remove bones and skin from chicken.
Pound flat with heavy pan; cut in half.
Arrange slice of cheese and ham on each piece of chicken.
Fold short sides over filling; roll up lengthwise. Secure with wooden toothpicks.
Dust with flour; dip into beaten egg.
Coat with crumbs.
Arrange rolls on microwave tray or baking dish; dot with butter.
Cover lightly with waxed paper.
Microwave on High for 4 minutes.
Uncover; microwave 2 minutes more or until chicken is tender.
Season to taste with salt and pepper.
Serves 4.
