Picante Chicken - cooking recipe

Ingredients
    6 boneless chicken breasts
    3/4 c. onion, coarsely chopped
    3 garlic cloves, minced
    1 Tbsp. vegetable oil
    1 1/4 c. chicken broth
    1 c. medium salsa or picante sauce
    1 c. Uncle Ben's converted rice
    1 medium tomato, chopped
    1/2 c. (2 oz.) shredded Cheddar or Monterey cheese
    1 ripe avocado, peeled and sliced (optional)
    salt to taste
Preparation
    Sprinkle chicken breasts with salt; set aside.
    Cook onion and garlic in oil in 10-inch skillet 2 minutes.
    Add chicken broth and salsa.
    Bring to boil.
    Stir in rice.
    Arrange chicken breasts over rice.
    Cover tightly and simmer 20 minutes.
    Remove from heat.
    Let stand, covered, until all liquid is absorbed, about 5 minutes. Garnish with tomato, avocado and cheese.
    Serve with tortilla chips or soft flour tortillas.
