Pork Jambalaya - cooking recipe

Ingredients
    2 lean pork chops
    salt and pepper
    1/3 c. chopped celery
    1/3 c. chopped scallions with tops
    1/3 c. chopped green pepper
    1/3 c. uncooked rice
    2/3 c. canned chicken broth
    1/2 tsp. garlic salt
    dash of red pepper
Preparation
    Season chops with salt and pepper.
    In a small lightly greased ovenproof skillet, brown chops on both sides.
    Remove chops; set aside.
    Pour off all but 2 teaspoons drippings.
    Add celery, scallions and green pepper.
    Saute until tender.
    Stir in rice, broth and seasonings.
    Bring to a boil.
    Return chops to pan. Cover; bake in 375\u00b0 oven for about 30 minutes or until chops are tender.
    Fluff rice with fork.
    Makes 2 servings.
