Black Bean Chili - cooking recipe

Ingredients
    1 medium onion, diced
    1 red pepper, stemmed, seeded and diced
    2 Tbsp. chili rojo oil or olive oil
    1 1/2 tsp. ground cumin, toasted
    2 jalapenos, stemmed, seeded and diced
    4 large cloves garlic, minced
    1 (15 oz.) can diced tomatoes
    1 tsp. dried oregano, crumbled
    1 1/2 tsp. salt (about)
    2 (14 oz.) cans black beans
    2 Tbsp. chopped cilantro
    1 tsp. lime juice
Preparation
    Saute the onion, red pepper, chili oil and cumin over medium heat for about 5 minutes.
    Add the jalapenos and garlic and cook another minute.
    Add the tomatoes, oregano and salt and cook over medium-low heat for about 20 minutes.
    Add the black beans and cook for another 20 to 30 minutes, stirring occasionally.
    (Add a little water if necessary.)
    Add the cilantro and cook 5 minutes longer.
    Season to taste with lime juice and salt.
    Serve hot.
