Oatmeal Raisin Muffins - cooking recipe

Ingredients
    1 1/4 c. rolled oats
    1 1/4 c. buttermilk
    2 large eggs, beaten
    3/4 c. packed brown sugar
    1 stick (1/2 c.) unsalted butter, melted
    1 c. flour, sifted with 1 1/4 tsp. baking powder, 1/2 tsp. salt and 1/2 tsp. baking soda
    1/2 c. raisins
Preparation
    Combine oats and buttermilk.
    Let the mixture stand for 1 hour.
    Stir in the eggs, sugar and butter.
    Add the flour mixture and stir until it is just combined (will be lumpy).
    Fold in the raisins.
    Spoon batter into greased and floured muffin tins.
    Bake in preheated hot (400\u00b0) oven for 15 to 20 minutes.
    Makes 18 medium or 12 large muffins.
