Turkey Rice Salad - cooking recipe

2 1/4 c. instant brown rice (uncooked)
2 c. diced oven roasted turkey breast
1/2 c. chopped green pepper
1/2 c. chopped celery
1/2 c. chopped red pepper
2 Tbsp. chopped parsley
2/3 c. honey Dijon fat-free dressing
Preparation

Prepare rice as directed on package, omitting margarine and salt.
Mix rice, turkey, celery, peppers and parsley in a large bowl.
Add dressing; mix lightly.
Serve warm or refrigerate until ready to serve.
Makes 6 cups or 6 servings.
