Cheesecake Surprise - cooking recipe

Ingredients
    2/3 c. all-purpose flour
    2 Tbsp. granulated sugar
    6 Tbsp. butter or margarine
    1 beaten egg yolk
    2 (8 oz.) pkg. cream cheese
    2/3 c. granulated sugar
    1 Tbsp. all-purpose flour
    1 tsp. vanilla
    4 eggs
    1 egg white
    2 c. diced, peeled, fresh pears
    1/2 c. fudge topping
    1 c. sour cream
    1/3 c. powdered sugar
    1/2 tsp. vanilla
Preparation
    Stir together first 2 ingredients and 1/4 teaspoon salt.
    Cut in butter until crumbly; stir in egg yolk.
    Press evenly onto bottom of a 9-inch spring-form pan.
    Bake at 350\u00b0 for 18 minutes; cool.
    Reduce oven temperature to 325\u00b0.
