Low-Fat Breakfast Casserole - cooking recipe
Ingredients

1 lb. turkey sausage
1 small can green chili
1 small onion, chopped
1/2 red bell pepper, chopped
6 slices bread, crusts removed
1/2 c. fat-free shredded cheese
2 c. skim milk
1 1/2 c. Egg Beaters or 6 whole eggs
1 tsp. dry mustard
Preparation

Preheat oven to 350\u00b0. Brown sausage in skillet. When it's partially done, add onion, green chili and bell pepper. Continue cooking until sausage is nicely browned. Grease a 9 x 13-inch pan. Place bread in pan. Pour sausage mixture over bread. Sprinkle with cheese. Beat milk, eggs and mustard together and pour over cheese. Bake at 350\u00b0 for 45 minutes. Casserole may be made ahead of time and refrigerated. If so, set out at room temperature 15 minutes before baking.
