Rice With Green Peas(Servings: 8) - cooking recipe

Ingredients
    2 c. frozen peas, thawed and drained
    3 c. rice
    3 1/3 c. water
    2 to 3 tsp. salt
    1 1/2 Tbsp. sake or white wine
Preparation
    Knead and rinse the rice.
    Place the rice and water in a heavy medium size saucepan and leave it for half an hour.
    Add salt and sake.
    Place the saucepan with a tight fitting lid on low heat for 1 to 2 minutes.
    Keep it covered until done.
    Heat over high heat for 9 to 10 minutes.
    Then for 5 to 6 minutes over medium heat. Continue cooking over low heat for another 5 to 6 minutes. Finally, increase heat to high and cook only for 20 seconds.
    Stop the fire and mix the prepared peas very quickly.
    Cover rice with a paper towel, replacing the lid immediately.
    Let stand for 10 minutes.
    Do not lift lid while rice is cooking.
