Baked Vegetable Omelet - cooking recipe

Ingredients
    2 c. shredded Pepper Jack, Monterey Jack or Cheddar cheese
    3 c. frozen broccoli, thawed, drained and chopped
    1 1/2 c. chopped tomatoes
    1/4 to 1/2 c. diced green and red pepper
    1/2 c. green onion or regular onion, chopped
    2 c. fresh mushrooms, sliced
    2 c. additional Cheddar cheese
    2 c. milk
    1/2 c. all-purpose flour
    1 tsp. salt
    dash of pepper
    6 eggs
Preparation
    Lightly grease a 9 x 13-inch baking dish.
    Layer Pepper Jack cheese, vegetables, then Cheddar cheese in dish.
    Beat milk, flour, salt, pepper and eggs until smooth; pour over cheese. Bake, uncovered, for 40 to 45 minutes at 350\u00b0 until the egg mixture is set.
    Let stand 10 minutes before serving.
    Great for brunch!!
