Sweet Potato Souffle - cooking recipe
Ingredients

1 (40 oz.) can sweet potatoes, drained
1 tsp. grated lemon peel
1/3 c. powdered milk or skim milk
2 Tbsp. all purpose flour
3/4 tsp. baking powder
1 Tbsp. apple juice concentrate
1/4 tsp. cinnamon
pinch of cloves
1 tsp. vanilla extract
1 tsp. fresh lemon juice
2 egg whites
Preparation

Preheat oven to 325\u00b0.
Place sweet potatoes in large mixer bowl and beat until smooth.
Add remaining ingredients except egg whites; blend until smooth.
Beat egg whites in small mixer bowl with clean beaters at medium speed until stiff but not dry.
Fold into potato mixture.
Pour into 8-inch nonstick baking pan and bake uncovered 50 to 60 minutes until golden and set.
Makes 6 servings.
